There are many pancake recipes out there but I want to share with you a couple of my favourites:
My Quick, Easy, Go To Pancakes:
Ingredients:
half a banana
1 egg
cinnamon
Method:
Mash the banana and add the egg and a shake of cinnamon and whisk together.
In a frying pan heat a little oil (coconut adds a wonderful flavour, but olive oil with do the job as well)
Take a spoonful of the mixture and form a round shape in the pan cook for a minute or so and flip to cook the other side.
Serve with a spoonful of greek yoghurt, seeds, and berries or other chopped fruit.
Nutritional Tips:
This is a great one for when time is short or if you are in a self catering situation as it requires very few ingredients.
The protein from the egg will help keep you full
Bananas are rich in magnesium a mineral that many people are lacking.
2. Almond Pancakes with Berry Coulis
Ingredients:
35 g ground almonds
2 large free range eggs
half tsp vanilla extract
60 g plain Greek/goats yogurt
35 ml unsweetened almond milk
80 g berries, frozen works well for this one.
Method:
To make the coulis, put the frozen berries in a saucepan with a very small amount of water and gently heat until they defrost and make sauce.
In a bowl, whisk the ground almonds, eggs, milk and vanilla.
Heat a frying pan (again either with coconut or olive oil) and cook as in the recipe above.
Top with yogurt seeds and berries.
Nutritional Tips:
Having the ground almonds makes them a little denser so they will be firmer.
Almond flour is rich in protein so the extra protein will fill you for longer.
Use plant yoghurt/full fat goats or sheep yoghurt works just a well.
If you are managing your weight both of these recipes will fit in well with you food plan. Both are gluten
